Nolen Gur Makhana

Place

This product brings together two distinctive eastern Indian food landscapes: Nolen Gur from Bengal’s winter date-palm tradition and makhana, or fox nuts, most famously associated with the wetlands of Mithila in Bihar. Mithila Makhana carries a registered Geographical Indication, while fresh Nolen Gur remains one of Bengal’s most cherished seasonal flavours.

Season

The story is rooted in winter, when fresh date-palm sap is collected and transformed into fragrant Nolen Gur. Makhana itself is enjoyed throughout the year, but pairing it with Nolen Gur makes this a particularly evocative winter pantry treat.

Make

Crisp makhana is coated or paired with the deep caramel character of Nolen Gur, bringing together airy crunch and seasonal jaggery sweetness. The challenge—and the craft—is to preserve the distinct aroma of date-palm jaggery without losing the light texture of the makhana.

Tradition

Makhana has long been cultivated in the wetlands of northern Bihar and is embedded in Mithila’s food economy, while Nolen Gur defines a celebrated part of Bengal’s winter sweet-making culture. Their pairing is our contemporary creation: two eastern Indian traditions meeting in one snack.

Modern Use

Enjoy Nolen Gur Makhana as a teatime snack, a light dessert bite or part of a winter tasting platter. Makhana is naturally low in fat before preparation and provides carbohydrates and some protein; Nolen Gur remains a form of sugar, so the finished product should be enjoyed as an indulgence rather than positioned as a health food.
